It had been a long time since we had the four cousins together and it was late in the evening, when we thought "we need a picture." As you can tell they were joking around as to who could be the tallest. Lewis had just dropped down from his tippy toes and Albert was stretching without being too obvious. Will is the oldest and Albert is the youngest of the cousins.
Prince had went down on the farm and picked some buttercups to decorate the house with and those are just a few. He also cut some Easter bush and Hawthorne bush for different vases.
Now to share one of the recipes that Mimi had us to try after watching Paula Dean cooking show. She does not get to Paula as often now as the time for the show to be aired on TV has changed.
Hash Brown Quiche
3 cups shredded frozen hash browns, thawed and drained
4 Tbsp or 1/2 stick butter
3 large eggs, beaten
1 cup half and half
3/4 cup diced cooked ham
1/2 cup diced green onions
1 cup shredded Cheddar
salt & pepper
Preheat oven 450 degrees.
Gently press the drained hash browns between paper towels to dry them as best as possible . In a 9 inch pie plate, toss the hash browns with the melted butter into the plate. Press them into the bottom and up the sides to form a crust. Bake for 25 mins.
While crust is cooking, in a large bowl mix the remaining ingredients. When hash brown crust is ready pour mixture into the crust and lower the temperature to 350 degrees and bake for 30 mins until the quiche is light golden on top.
Now Paula does a good job, but lets add what kitty justice has done to improve it. I leave the hash browns moist and do not add the butter and use a little rolling pin to push down the moist potatoes and up the sides. I also use a Pyrex deep dish so there are no spills in the oven.
I add twice as much ham and a cup of chopped parsley, 1 tsp salt and 1/2 tsp pepper and an extra egg.
I made this with the left over honey ham and served it with a green salad on the side. Makes an easy meal.
The Kitty Justice is you can add anything to Paula recipe that you like and it will make a yummy meal. Y'all need to give a big shout out to Paula for that hash brown crust idea as it is "SO GOOD. "

Yeah, Kylee is a cutie. Well I can say that. When she was little and still to this day I call her my favorite grand-daughter and it took her a while until she realized HEY--I am the only granddaughter. And I would say yeah, but you are still my favorite. All my girls and their kids inherited my husbands dimples. I am the only one without. MB
