Shrimp Curried Eggs
STUFFED EGGS:
8 Hard boiled eggs, halved
1/3 cup mayonnaise
1/2 tsp. salt
1/2 tsp. curry powder
1/2 tsp. paprika
1/4 tsp. dry mustard
SAUCE:
2 Tbsp. margarine
2 Tbsp. flour
1 ten oz. can of cream of shrimp soup
1/2 soup can milk
1/2 cup shredded sharp cheese
1 cup small, cooked shrimp ( I use about 2 cups)
TOPPING:
1 cup fresh bread crumbs
1 Tbsp butter or margarine
STUFFED EGGS: Mash egg yolks and mix with remaining ingredients. Fill egg whites with mixture and arrange eggs halves in rectangular baking dish. SAUCE: Melt margarine and add flour gradually, making a paste. Slowly add soup and milk and cook until thick. Add cheese and stir until melted. Add shrimp. Pour sauce over eggs in baking dish. TOPPING: Saute bread crumbs in butter. Sprinkle over top of casserole. Bake in 350degree oven until thoroughly heated about 25 minutes. This is a delicious brunch or luncheon entree. It will serve six. Serve with a favorite green, mine being fresh asparagus and a light lemon dessert.

I did a bit of catchup. The photos of your birds and the snowballs are beautiful. Love that old toy in the previous post.

Japenese maples are very pretty.

The boys came and helped put in a few vegetables today. We planted aspargus, tomatoes, onions and leaf lettuce. I hope it all does well.

We had a lot of rain last week and the river is high, but not alarmingly so. We are to have nice weather until Wed. when the rain will move in once again.

Glad you had some time to catch up. After the 5 1/4 inches of rain we had since last Thursday, most of the flowers are drooping and petals are scattered upon the ground. What fond memories for the boys, planting veggie at Grandmas. We got a break today and the sun peeked out for all of five minutes and tonight it is to thunderstorm again with rain for another five days. I think we are getting April showers in May. Have a good week. Peace
