Fruit Cake

 I cooked a dozen fruit cakes this year. This is a photo of the last batch and the recipe makes six nice cakes. I made the photo before I soaked them in Jack. It is best to chill before you cut or it will crumble. Puppy stirred the stiff batter for me which was a GRAND help. It takes 2 days from beginning to end,  to complete the process of baking these cakes. Puppy has a real appreciation for cooks who make fruit cakes to give away. As he was working to stir the flour into the fruit, I told him I liked to give homemade gifts because it was like giving the people a little of myself. 
I made a close up so yawl's mouth would water. As my friend Wordy would say "No self respecting fruit cake would be made without whiskey." I know this is the time of year to make jokes and tales of fruit cake lore.  The Kitty Justice is not to judge a fruit cake until you taste mine.

I love Fruit Cake. Especially the ones from a place in Texas, that a woman use to have shipped to me every year, when she stopped our one daughter started having them delivered to me, but the last few years we haven't received one. I know Hickory Farms use to have a good one also. But I don't even know if they are in business any longer. Enjoy and hope all of your friends realize how good they are. I even love the fruit and nut Easter eggs, no one else in this house will eat them, they don't know what they are missing.

Very tempting indeed. I made my cake a few weeks ago, triple the quantity of ingredients...and it's laced with both rum and brandy...and I intend giving it a top up tomorrow. So it's a very self-respecting *hic* fruit cake!

I'm very proud of myself for not succumbing to temptation! I won't be cutting it until Boxing Day, probably...at the earliest.

I made one big one and the second is loaf size like yours pictured...I'm giving that one to friends for Christmas.
