Ruben Casserole

I have been in the numerous cookbooks that Mimi has collected over the years and I found a Ruben Casserole. Last night I tried the recipe and I always ask when I try something new if it should be a keeper or not. This one made the keep list. On page 232 under beef in "The Texas Experience-Friendship and Food Texas Style" a cookbook from the Richardson Woman's Club was the new recipe. This book was in the Fifth Printing in 1986 and at each printing 10,000 copies were printed. There may have been additional printings since then but if yawl locate a copy, I would advise buying one as it has several new recipes I have flagged to try. 
In case you cannot find a copy, here is the recipe

RUBEN CASSEROLE
1 11oz can sauerkraut
2 tomatoes. sliced
2 Tbsp butter
2 Tbsp Thousand Island Dressing
1-8 oz. can corned beef, shredded
8 oz. shredded Swiss cheese
party rye bread for topping

Spread drained sauerkraut in 8 x 12 dish. Top with tomato slices. Dot with butter and dressing. Cover with corned beef. Sprinkle with cheese. Bake at 425 for 15 minutes. Remove casserole from the oven. Butter one side of the rye bread and place it butter side up over top of the cheese. Return to oven and bake for 15 to 20 minutes longer. Serves 6-8

Some Kitty Justice notes, I might put the sauerkraut between paper towels and squeeze out excess moisture. I would thinly slice only one tomato. I used sliced corn beef instead of shredded so I might shred it the next time.

I have never seen nor heard of that recipe before. Is it really nice? We don't have canned corned beef here, not that I've seen, anyway.

The whole family liked it so it is a keeper. I did not use canned corned beef but went to the deli and picked up some thin sliced Boar's Head corned beef. I do think I will shred the beef next time to make it easier to serve. Peace
