Second crop of Basil.


Drying Rosemary for the winter. I have never tried this but it was mentioned on a blog that shared cooking tips, and she used the woody sticks of the Rosemary as skewer for chicken. I have cut off the Rosemary to finish drying and left the woody sticks to grill out this week. I will let you know how good it works.
With the second crop of Basil, I can now make another batch of Pesto. I made some from the first crop and we have already scarfed it down and I also dried some for future meals.
In the local paper a recipe for Rosemary cookies was printed and if it turns out a keeper I will post it later on.
Pot Roast
1 chuck roast (4-5 lbs)
3 Med. size onions
2 cups pre peeled baby carrots
8 Med size potatoes
1/2 cup ketchup
1/4 cup red wine vinegar
2Tbsp Worcestershire sauce
1 tsp salt
1/2 cup water
1 Tbsp Rosemary ( I use a little more but I love this herb)
Brown roast, add sliced onions, carrots and quarter potatoes. Mix the next five ingredients together and pour over the roast. Sprinkle with the Rosemary. Cover and cook 325 degree oven for three hours. For crisp carrots and potatoes add to the roast the last hour. This can also be done in a crock pot. I have done it both ways and it usually depends of what kind of time I have to manage.
The kitty justice is it is a complete meal and all y'all have to do is fix some bread. My choice is cornbread.
