Speaking of leaves, Prince is in full swing with the leaf blower trying to stay half way ahead of the falling leaves.
I thought I would share my version of a sweet potatoes.
Sweet Potato Casserole
3 large sweet potatoes
1 half stick of butter
1 half cup of brown sugar
1 half tsp of cinnamon
1/4 cup of orange juice
Marshmallows to dress up the top.
Peel and cube sweet potatoes and boil them until they are soft. Mash with the butter added so it will melt thoroughly. Add brown sugar, cinnamon and the secret ingredient (orange juice) It enhances the favor of the potatoes. Place in a casserole dish and top with marshmallows. Brown the marshmallows and serve. If you make this ahead, you will need to place the casserole in a 300 degree oven until it warms then add the marshmallows and brown. Enjoy

One year when we were living on the Ohio/Kentucky boarder, my husband's company had a holiday party. I remember tasting this dish and thinking I need the recipe. I had to laugh because a few minutes later my husband came to find me to ask if I would find the person who made the casserole so we could get the recipe.
We now include it every year in our Thanksgiving meal. I can't wait, it's so delicious.:)
P.S. I've never seen a purple jew. It's gorgeous!
I must try that recipe. My daughter asked if I would make the sweet potatoes like I always do and I was stumped because I don't do them. she said I did so i made some this evening and when she gets home from work I hope that is what she is remembering. I think not. We will see. MB

I am glad y'all found sweet potato casserole while living in the lower 48. I have a sweet tooth which is not good so I usually add more brown sugar to taste. This year I had grown two bunches of fresh sage and had clipped some off and put it in the kitchen window with water so I had fresh sage for my dressing. We had a total of nine including me around the dinner table. We were Blessed to have family who were not sick and all are working.
I am glad you enjoyed the jew. In the spring I cut it back and throw the cutting off the porch and with little effort they root and make a carpet of jew. Peace
